I’m back to blogging…after taking more than a month off! My first official post of the summer is one of my favorite boy’s Dr. Seuss themed birthday party. Little G turned 1 in July and all his friends and family gathered at his house to celebrate. Here are few of my fav images.

School’s out, the sun is shining bright, the grill’s on, and we are all so happy! I LOVE summer! Summer break is probably the BEST thing
about being a teacher!

you will receive a password to an online gallery, and a CD with 10 images.

Since school is out (YAY!), and the weather is getting nice and warm, I thought I would share one of my favorite summer treats. My mom has been making this for years, but I never realized how easy it was to make coffee jelly. Yes, coffee flavored jelly with whipping cream. Pure deliciousness. SO.FREAKING.EASY
Here it goes…
2 packs KNOX
3 tablespoons of instant coffee
20 ounces of water
Whipping
Cream
8 tablespoons of sugar

Step 1 : melt each packet of Knox with a little bit of water.
Step 2 : add 20 ounces of water in a pan, add the melted Knox, and boil. After it boils, turn the heat down for 3 minutes.
Step 3 : add in the sugar and the coffee

Step 4 : Let the sugar melt. Turn off the heat.
Step 5 : Let it cool for a bit and pour it into a container. Stick it in a fridge.

Step 6 : Cut, and pour whipping cream.

Perfect summer treat. My husband’s favorite.
